A Single Serving Chocolate Chip Oatmeal Cookie

- 1 tbsp Unsalted Butter (room temperature)
- 1 tbsp Brown Sugar
- 1/2 tbsp Coconut Sugar
- 1/4 teaspoon Vanilla Extract
- 2 tbsp Preferred Flour (almond flour or plain ol’ all-purpose)
- Pinch A few pinches of kosher salt
- 1 tbsp Chocolate Chips
- 1-2 teaspoon Slivered Almonds
- 2 teaspoon Rolled Oats
- Preheat oven to 350 degrees and line a baking sheet with a small piece of parchment paper.
- Mix butter, both sugars, and vanilla extract together with a fork until light and fluffy.
- Mix in flour and salt until just combined, then add chocolate chips, almonds, and oats. If mixture seems crumbly, use your hands to mix it together.
- Roll dough into a ball, then press down into whatever cookie shape you prefer. We like the classic round. Bonus: If you don’t have the time (or patience) to wait for your oven to heat, you can eat your cookie raw. Yes, you can actually eat the cookie dough.
- Bake for 10-15 minutes, depending on how crispy you like your cookies.
